Smoked Bologna

Ingredients[edit | edit source]

  • Bologna
  • Butter, Mayo, Mustard, Honey - just a binder/smear
  • Favorite Spices -- I like Slap yo Mama, or TexJoy

Directions[edit | edit source]

  1. Score the meat, usually diamond pattern to let the smoke go deeper.
  2. Smear to add a binder (something to stick to)
  3. Smoke @ 225 for 3-4 hours... you never need to get temp above 145 since it's pre-cooked. You're just adding flavor.

Results[edit | edit source]

Kind of a unique thick ham like thing that you can eat like a burger.
