My views on the various Mexican food out there.
Mexican food is my wife's favorite, so we eat quite a bit. This discusses different types or places that are Mexican food. Having lived in both Texas and California, and going to Mexico quite a bit, we do know the difference. Though the quality and style varies a lot in all three places.

  • What's Tex Mex? This article never really answers. The point is it started around the 1920's, and brought in many things we think of as Mexican food today in America: fried corn tortillas, velvetta cheese sause, and so on. But since Texas was once Mexico, and is influenced accordingly, Tex Mex is more like a regional dialect of Mexican food. [1]
  • What's Cal Mex? Like Tex-Mex, it's kinda a regional expression of Mexican food that appealed to Californians and the people that emigrated there.

Conclusion[edit | edit source]

To discuss what's better, we first need to know what is. And while there are some differences between regions, they are all cross pollinating and influencing each other, in the U.S. and Mexico. So what you ate in an area of Mexico 50 years ago, and what you would get there today, are different. So it's almost what excludes one kind of Mexican food (or ingredients) from being "X" than what defines it. The Cobb Salad, and Wolfgang Pucks Pizza are both California'ish -- in that they both originated there -- but they aren't at all alike, and have almost no ingredients in common.
